I just want to say I will not be blogging on the knit girl anymore. Knitting has been few and far between these days. It doesn't mean I won't be knitting anymore however I do not knit fast enough to keep the blog.
However, it you want to keep up with my goings on I have started a new blog, I wish I were French. To my regular readers please check it out. You will find that it will be updated more than the knit girl.

Simplicity at best
I have been reading the Mastering the Art of French Cooking: Volume 1 and last night was inspired to make some soup. Which was nourishing and delicious. I have been sick for the last couple of days with the stomach flu and need something that would sooth my stomach.
Soup is one of the best meals one can have and the recipe I made last night was phenomenal!
It was very simple recipe:
4 cups of peeled red potatoes
4 cups of sliced yellow onion (you could use leeks too)
2 quarts of water.
Boil this (cover slightly) for 40-50 minutes until potatoes and onion have soften.
For Christmas, Travis gave me a immersion blender. LOVE IT! But if you don't have one you can use a blender or food mill.
I scooped out part of the potatoes and onions in a separate bowl (cause I wanted some bits of potato and onion) and pureed the rest. Then returned the potato and onions back to the soup.
For extra flavor I added a few tablespoons of butter and palmful of Herb de Provence.
What was left was the most flavor broth of potato and onion goodness!
So simple and so easy.

Good Reads
In a couple of weeks I will being joining my first ever book club. I am so excited about this! Our first book that we will be discussing is Twilight by Stephenie Meyer. I am ashamed to say that I read the whole series in about two weeks. It was like eating potato chips— I couldn't read just the first one, I had to devour all four!
What is even more shameful is when I finished Twilight I ran out to see the film!
It was horrible.
However, after reading the series I got depressed cause I didn't have another book lined up to read. I then discovered this site and I am obsessed and motive to read more.
Check out Goodreads.com and be my book buddy! If your resolution was to read more books this year, this site will be a great start to that resolution.

Body & Soul Challenge: Scaling Back
This year I am participating in the Body & Soul Challenge (B&SC). It is a five week program focusing on overall health and well being.
Yesterday was my first day of week 1: Detox Done Right. I have never done a Detox before and am very much excited about expelling the toxins from the past year.
I started off taking the Detox Diva Quiz and scored a 7 out of 9, making me an official Detox Diva. Oh la la!
The B&SC theme for day one was scaling back and preparing myself for the challenge.
When I think about my diet in general I believe it is pretty good. I don't consume large amounts of caffeine, process food or sugars. I drink a lot of water, tea and tend to gravitate to fruits and whole grains. Unfortunately I could do better in eating more veggies and have a deep weakness for french fries and Egg McMuffin Value Meals with a Hi-C Orange drink.
However, the occasional indulgence is o.k. as long as I plan for it. Planning and portion control is the key I think to maintain a good weight and overall health. Weight Watchers is a great program in learning planning and portion control. I have maintain my ideal weight now for about two years.
So far I have every set for the detox. My brown rice is ready for the lunch week, along with cabinet stocked with a variety of beans and a freezer full of frozen veggies.

Yarn Con
I be heading to this event next weekend. It's a great event to seek out local producers of yarn and other knitting supplies.
I have been knitting quite a bit due to the changes of the season and will be posting some pictures of the projects I have been working on. Also I will be stocking my etsy shop soon with different things.
